I just wanted to confirm whether the new version of CC has the ability to print a publishing ready page of a 15x15 puzzle with wrap around (or below grid) clues, and is there a standard page size that must be used

You can export a PDF file of the grid and clues. You can change the page size in Printer Setup.

I'd like to (I hope!) publish my own crosswords in book form via an independent printing house, can that be done, and if so, do they need to have CC installed on their computer? Also, if that's possible, would they just be burnt to a CD?

Best to consult with the publisher about the format they would like. You can export from CC in various formats (see the File menu options), so they probably wouldn't need it.
